The Cendré de Notre-Dame
This soft paste cheese is made from pasteurized whole milk provided by four dairy producers of the Témiscamingue region (Lunick Farm, Clarital Farm, J. Gauthier Farm and Fol-Espoir Farm). This cheese is covered with a flowered crust, while its paste is unctuous and becomes slightly melting as it takes age. A thin layer of ash covers its exterior, giving it a fine appearance while adding a subtle peppered savour and a slight crisp to it. Cendré de Notre-Dame’s presence honours any cheese platter.
