The Two Years Old Cru du Clocher is a cheddar cheese made from raw milk provided exclusively by herds neighbouring the cheese dairy, selected for the cows’ alimentation and the microbial quality of the milk. Although the two years old version is a little crumbly, it remains smooth with distinctive, pronounced flavours.
Regardless of its curing time, the Cru du Clocher has an excellent taste and reminds of the cheddars from 50 years ago, when there was a cheese dairy in every village. The golden Cru du Clocher owns its name to its elongated shape, reminding the steeple of the town where it’s manufactured!
